Baking Series : Apfelkuchen

Welcome to the start of my baking series.

The first recipe I am going to share with you comes from the wonderful Ideas magazine. I love getting Ideas as it is filled with all the things I like : stationery, craft, food and decor. This particular recipe comes from their October 2014 issue on page 49 and 50 and I have made it twice.

 

Apfelkuchen

Serves : 8

Preparation time : 15 minutes

Baking time : 40 minutes

Oven temperature : 180C

Cake :

125g (135ml) butter

210g (250ml) sugar
3 large eggs
140g (250ml) cake flour
6ml baking powder
Pinch of salt
65ml milk
1 can pie apples, drained
Fresh cream, to serve

 

Syrup :

250ml milk

210g (250ml) sugar
110g butter

 

1.          Beat the butter and sugar together. Beat in the eggs one at a time.

 

2.          Sift the dry ingredients together with a pinch of salt and add to the butter mixture,   alternating with the milk.

 

3.          Butter a casserole dish or a pie dish. Pour in the batter mixture. Press the pie apples into the mixture. Bake
in a preheated oven for about 30 minutes.

 

4.          Put the syrup ingredients into a saucepan and heat for 10 minutes.

 

5.          Take the cake out of the oven. Pour the syrup over it and then return to the oven and bake for a further 10
minutes. Serve warm with whipped cream.

 

Notes :

I baked the Apfelkuchen in a square dish the first time and it rose right to the top. It was better the second time when it was baked in a rectangular dish.

I heated the syrup ingredients in a glass bowl in the microwave. Be careful if you do this as the glass can get very hot. Watch carefully as the mixture can boil over.

Instead of buying two small cans of pie apples, I bought the large can as I usually do when I make apple crumble (coming soon).

The pudding was served with custard.

The recipe was very easy to make.
